City Chicken

Ingredients

  • 4 chicken breasts or turkey breasts
  • 1 cup all-purpose flour
  • 4 garlic cloves
  • 2 pinch of salt
  • 1/2 teaspoon pepper
  • 1/4 cup butter
  • 3 tablespoons extra virgin olive oil
  • 2 cans of cream of chicken soup
  • 4 cups chicken broth
  • 1 cup water

Instructions

  1. Preheat oven to 350 F.
  2. Bake chicken covered for 1 hour.
  3. Cut chicken into small chunks.
  4. Combine 1/2 cup flour, 2 minced garlic cloves , 1 pinch of salt and 1/4 teaspoon pepper in a freezer bag.
  5. Shake chicken pieces with mixture in freezer bag to thoroughly coat each piece.
  6. In a large skillet or frying pan, heat butter and olive oil over medium heat.
  7. Brown chicken chunks turning frequently.
  8. Pour 1 can of cream of chicken soup over chicken.
  9. Add 2 cups of chicken broth and water.
  10. Bring to boiling.
  11. Reduce heat.
  12. Cover and simmer for 1 hour or until tender.
  13. Remove chicken and keep warm.
  14. Make extra sauce to serve with chicken.
    1. Combine the following ingredients in a pan.
      1. 1/2 cup flour
      2. 2 minced garlic cloves
      3. 1 pinch of salt
      4. 1/4 teaspoon pepper
      5. 2 cups of chicken broth
      6. 1 can of cream of chicken soup
    2. Mix together. Heat and serve.
