Creamy Garlic Shells

Ingredients

  • Mini shell pasta noodles (or any small noodles)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 2 tablespoons flour
  • 3/4 cup chicken broth
  • 3/4 cup oat milk
  • Salt
  • Pepper
  • 1/4 cup grated cheese (swiss or lactose-free parmesan)
  • 2 teaspoons parsley flakes

Instructions

  1. Cook pasta in salted boiling water until al-dente.
  2. Drain, then set aside.
  3. Heat another pot on stove at medium heat.
  4. Add butter and olive oil.
  5. Once butter is melted, add garlic.
  6. Sauté until light-golden brown.
  7. Sprinkle in flour.
  8. Whisk and sauté for 1 minute.
  9. Slowly pour in chicken broth and milk, continually whisking until mixture is smooth.
  10. Season with salt and pepper.
  11. Remove pot from heat.
  12. Pour sauce onto noodles.
  13. Stir in cheese and parsley flakes until smooth.
  14. Enjoy!
